Recipe: Crispy Sweet Potato Fries with Olive Oil

Just sweet potatoes, extra virgin olive oil, a few herbs, and a hot oven. The result? Thin, golden fries with crispy edges, soft centers, and a final drizzle of olive oil that brings everything together.

Serve them straight from the oven and place the plate in the center of the table. They won’t last long.

 

Ingredients
  • 2–3 medium sweet potatoes

  • 2–3 tablespoons GOTA Cooking Oil

  • Sea salt, to taste

  • Fresh herbs (thyme or rosemary)

  • Optional: extra olive oil for finishing

Instructions

Total Time: 30 minutes

Prep: 10 minutes

Cook: 20 minutes

1. Cut the sweet potatoes
Wash the sweet potatoes and cut them into thin fries. The thinner they are, the crispier they’ll get in the oven.

2. Prepare the tray
Place the fries on a baking tray lined with parchment paper, spreading them out in a single layer so they roast evenly.

3. Add oil and seasoning
Drizzle with the oil, sprinkle with sea salt and fresh herbs, and toss gently so every fry is lightly coated.

4. Bake until golden
Bake in a preheated oven at 200°C/400°F for about 20-25 minutes, until the edges are golden and crisp. Shake the tray halfway through so they cook evenly.

5. Finish and serve
Once out of the oven, add a final drizzle of GOTA Finishing Oil if you like, then serve immediately while they’re warm and crispy.
